Quality of texture, Structure of cereal and dairy products
Permeability and mechanical resistance of digestible or biodegradable films. Vectorisation of active molecules (medications, nutrients, aromas), Wood-Wine or Cork-Wine transfers (water and aromas).
Rheology - study of micronic and submicronic particles (granulometry, zetametry) - Molecular Mobility (NMR, EPR) - Phase transition (DSC, permittivity) - Retention and liberation of small molecules including water - Chemistry - Physico-chemistry of proteins (DSC, IR, EPR).

 Research

Chemistry and physico-chemistry of materials, applied to food and health products (EA 581).
Role of water as the structuring agent of a matrix, denaturing force for macromolecules (polysides, proteins), as a control factor in the “vectorisation” of active molecules (aromas, nutrients, medications), interfacing in particular with digestible films, of a fat globule or a capsule.
The study of matrixes in a concentrated environment is the central theme of the the research team.
